Product Description
Firm, sweet and with a delicate flavour that sits somewhere between turbot and plaice, brill is one of the finest flat fish in British waters. Considered by many to be on a par with turbot, it remains one of the most underrated fish on the British coast.
This is a fish that rewards careful cooking. Roast whole with butter and herbs for a centrepiece worth the occasion, or pan-fry for a clean, golden finish. The flesh is firm enough to hold its shape but flakes cleanly when cooked, with a natural sweetness that needs little else.
Our brill is sourced through Brixham Fish Market, landed fresh from the South West coast. Prepared to order by our fishmongers, with nothing sitting in stock, and sent out fresh on your chosen delivery day. Always fresh and never previously frozen, so you can freeze it at home if needed.
Serve simply with brown butter, capers and a squeeze of lemon.

Fresh Wild Brill has firm white flesh with a delicate, slightly sweet flavour. It is closely related to turbot and is highly regarded for its refined taste and excellent texture.
What is the best way to cook Fresh Wild Brill?
Fresh Wild Brill is excellent when pan fried, grilled or gently roasted. The firm flesh holds together well during cooking and pairs beautifully with simple ingredients such as butter, lemon and fresh herbs.
Where is your Fresh Wild Brill sourced from?
Our Fresh Wild Brill is sourced through Brixham Fish Market, where our buyers select fish from the daily auction landed by boats working the South West coast.
Does Fresh Wild Brill contain bones?
As Fresh Wild Brill is a natural flat fish, bones are present depending on how the fish is prepared. When cooked on the bone, the bones help enhance flavour and can easily be removed when serving.
