Product Description

Soft, delicate and with a clean, mild flavour, Cornish hake is a fish that rewards gentle cooking. Popular across Spain and Portugal, it is less celebrated in Britain than it deserves to be, and all the better for it when you do find it fresh.

This is a fish that suits careful handling. Steam or bake for the most delicate result, pan-fry gently for a soft, flaky finish, or cook in a parcel with aromatics to keep the moisture in. The flesh is tender and separates easily, so it works well in lighter dishes where the fish is the focus.

Our hake is Cornish, caught by netters fishing out of Newlyn from sustainable fisheries, and sold through Brixham Fish Market auction. Prepared to order by our fishmongers, with nothing sitting in stock, and sent out fresh for your chosen delivery day. Always fresh and never previously frozen, so you can freeze it at home if needed.
