Product Description
Few fish have a more distinctive structure. The fan-shaped wings carry soft, gelatinous flesh that pulls away from the cartilage in long, tender strands. Mild and sweet in flavour, with a richness that suits classic, butter-based cooking particularly well.
Pan-fry in foaming butter until golden on both sides, then finish with capers, lemon and a splash of brown butter for a traditional skate meunière. The wings are forgiving in the pan and cook evenly, making them straightforward to handle despite their unusual shape. Also well suited to baking or poaching for a softer result.
