Product Description
Firm, meaty and with a mild, sweet flavour, huss is a fish with a long history in British cooking. Known variously as rock, rock salmon and dogfish, it is the same fish under different names. A good one at that. Boneless when the cartilage is removed, it is straightforward to cook and satisfying to eat.
Huss holds up well to robust treatment. Deep-fry in batter for a classic chippy result, pan-fry with garlic and herbs, or bake slowly in a sauce where the firm flesh absorbs flavour well. It is forgiving in the kitchen and well suited to anyone who wants a meaty, reliable fish without a strong flavour.
Our huss is sourced through Brixham Fish Market, landed fresh from the South West coast. It is supplied skinned, with the option to have the bone and cartilage removed. Select your preference above. Prepared to order by our fishmongers, with nothing sitting in stock, and sent out fresh on your chosen delivery day. Always fresh and never previously frozen, so you can freeze it at home if needed.
Serve simply in batter with chips and mushy peas, or baked with tomatoes, capers and white wine.

I used to have rock and chips at least once a month, but since I moved to the North West all thats available is cod haddock the odd pollock and hake. It was really good that my local chip shop fried the portioned huss, it was like going back in time to East London. If only I could buy 'wallies' up here as well!!

As described . Delivery as requested, packing was great and fish superb. Only flaw was me -was too tired to deal with it so it went in the freezer as delivered to be dealt with the next day when frozen, not so easy. Grateful thanks for my inherited electric knife.

Really fresh with excellent service from you
I use huss to make an excellent fish stew with diced peppers, chopped tomatoes, diced potato, leeks/onion and a touch of chilli flakes, chopped parsley and seasoning. I add the diced huss, cover it all with water and cook in my Aga for about an hour. Its an easy and filling meal for cold days in winter and we mop up the juice with warm crusty rolls or bread. The huss doesn't disintegrate as other fish might and a two-pack for two people goes a long way. Fish has become very expensive in recent years but huss can be good value for money, and Hamilton's fish is always excellent.
