Product Description

Firm, meaty and with a mild, sweet flavour, huss is a fish with a long history in British cooking. Known variously as rock, rock salmon and dogfish, it is the same fish under different names. A good one at that. Boneless when the cartilage is removed, it is straightforward to cook and satisfying to eat.

Huss holds up well to robust treatment. Deep-fry in batter for a classic chippy result, pan-fry with garlic and herbs, or bake slowly in a sauce where the firm flesh absorbs flavour well. It is forgiving in the kitchen and well suited to anyone who wants a meaty, reliable fish without a strong flavour.

Our huss is sourced through Brixham Fish Market, landed fresh from the South West coast. It is supplied skinned, with the option to have the bone and cartilage removed. Select your preference above.
