Product Description

John Dory is one of the most prized fish in British waters. Its white flesh is firm, sweet and remarkably clean in flavour, with a texture that sits closer to Dover sole than anything else. A fish that chefs seek out and home cooks are increasingly discovering.

It suits simple, confident cooking. Pan-fry the fillets in butter for a golden, delicate finish, or roast whole on the bone for the fullest flavour. The flesh is lean and holds its shape well, making it easy to handle and hard to overcook. It needs very little to make it shine.
