Light, soft and with a clean, delicate flavour, whiting is one of the most underrated white fish in British waters. Less well known than cod or haddock, it is a fish that has long been a favourite with those who know it well, valued for its fine texture and gentle taste.

It suits gentle cooking. Pan-fry in butter for a soft, golden result, bake with cream and herbs for something more indulgent, or use it in a light fish soup or chowder where its delicate flesh absorbs flavour well. It cooks quickly and is easy to handle, making it a good choice for a simple, satisfying supper.
