John Dory with Smoked Garlic Dressing

Ingredients
- 2 John Dory fillet Portions (2 x 300g fish filleted)
- 3 smoked garlic cloves, finely chopped or crushed
- Juice of 1 lemon
- 3 tbsp olive oil
- Salt and pepper
- Optional: knob of butter for cooking
Method
- Season the John Dory fillets with salt and pepper.
- Heat a little oil (and butter if using) in a non-stick pan over medium-high heat.
- Place the fillets skin-side down and cook for 2–3 minutes until the skin is crisp. Flip and cook for a further 2 minutes or until just cooked through. Set aside and keep warm.
- In a small saucepan, gently heat the olive oil and smoked garlic over low heat for 2–3 minutes, being careful not to brown it. Remove from the heat and stir in the lemon juice.
- Spoon the warm smoked garlic dressing over the fish and serve immediately.
Serving Suggestion
Pair with buttery crushed potatoes, grilled asparagus, or wilted greens. This dish also works beautifully alongside a crisp white wine.
