Ginger Hake Parcels

Ingredients
- 2 hake fillet portions (approx. 150g each)
- 1-inch piece of fresh ginger, grated
- 1 garlic clove, finely chopped
- 2 tsp soy sauce
- Juice of half a lime
- 1 spring onion, sliced
- 1 small red chilli, sliced (optional)
- Fresh coriander or parsley (to serve)
- Foil for wrapping
Method
- Preheat your oven to 200°C (fan 180°C) or heat the barbecue.
- Lay each hake fillet on a sheet of foil large enough to wrap it completely.
- Top with ginger, garlic, soy sauce, lime juice, spring onion, and optional chilli.
- Fold the foil over to create sealed parcels.
- Bake or grill the parcels for 12–15 minutes, or until the fish flakes easily.
Serving Suggestion
