Ingredients

  • 2 hake fillet portions (approx. 150g each)
  • 1-inch piece of fresh ginger, grated
  • 1 garlic clove, finely chopped
  • 2 tsp soy sauce
  • Juice of half a lime
  • 1 spring onion, sliced
  • 1 small red chilli, sliced (optional)
  • Fresh coriander or parsley (to serve)
  • Foil for wrapping

Method

  1. Preheat your oven to 200°C (fan 180°C) or heat the barbecue.
  2. Lay each hake fillet on a sheet of foil large enough to wrap it completely.
  3. Top with ginger, garlic, soy sauce, lime juice, spring onion, and optional chilli.
  4. Fold the foil over to create sealed parcels.
  5. Bake or grill the parcels for 12–15 minutes, or until the fish flakes easily.

Serving Suggestion
