
Foil Packet Pollack with Vegetables
These foil-baked fish parcels are the ultimate easy dinner — healthy, delicious and practically mess-free. The steam gently cooks the pollack until tender while locking in moisture, flavour and nutrients. Customise with your favourite vegetables or herbs for a quick midweek meal.

Ingredients
- 2 pollack fillets (about 150g each)
- 1 courgette, sliced
- 1 small red pepper, sliced
- 8 cherry tomatoes, halved
- ½ red onion, thinly sliced
- 2 tbsp olive oil
- 1 lemon, sliced
- Fresh thyme or parsley
- Salt and black pepper
Method
- Preheat the oven to 200°C (180°C fan).
- Lay out two large squares of foil and divide the vegetables between them. Drizzle with olive oil and season.
- Place a pollack fillet on top of each pile of vegetables. Add lemon slices, herbs, and a little more seasoning.
- Fold the foil into sealed parcels, leaving space for steam to circulate.
- Bake on a tray for 15 minutes, or until the fish is cooked through and flakes easily.
Serving Suggestion
Serve the parcels directly on plates with new potatoes or crusty bread. Great for a light dinner or prep-ahead meal — and no washing up needed!
