Sesame-Rolled Tuna with Coriander Noodles

Ingredients

  • 2 fresh tuna loin steaks (approx. 150g each)
  • 2 tbsp sesame seeds (white or mixed)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil (optional)
  • 150g dried egg or rice noodles
  • Juice of 1 lime
  • 1 garlic clove, finely grated
  • 1 tsp grated fresh ginger
  • Fresh coriander, chopped
  • 1 spring onion, sliced
  • 1 tbsp vegetable or rapeseed oil
  • Salt and pepper

Method

  1. Cook the noodles according to pack instructions. Drain, rinse, and toss with a little sesame oil, lime juice, garlic, ginger, and chopped coriander. Set aside.
  2. Season the tuna lightly, then roll each steak in sesame seeds to coat all sides.
  3. Heat the vegetable oil in a frying pan over high heat. Sear the tuna for 1–2 minutes on each side (depending on thickness) for rare, or a little longer if preferred. Rest for 1–2 minutes.
  4. Slice the tuna and serve on top of the coriander noodles. Garnish with spring onion and an extra squeeze of lime.

Serving Suggestion

This dish pairs well with a light Asian-style salad or edamame beans. For extra flavour, drizzle with soy sauce or a touch of chilli oil.
