Sesame-Rolled Tuna with Coriander Noodles

Ingredients
- 2 fresh tuna loin steaks (approx. 150g each)
- 2 tbsp sesame seeds (white or mixed)
- 1 tbsp soy sauce
- 1 tsp sesame oil (optional)
- 150g dried egg or rice noodles
- Juice of 1 lime
- 1 garlic clove, finely grated
- 1 tsp grated fresh ginger
- Fresh coriander, chopped
- 1 spring onion, sliced
- 1 tbsp vegetable or rapeseed oil
- Salt and pepper
Method
- Cook the noodles according to pack instructions. Drain, rinse, and toss with a little sesame oil, lime juice, garlic, ginger, and chopped coriander. Set aside.
- Season the tuna lightly, then roll each steak in sesame seeds to coat all sides.
- Heat the vegetable oil in a frying pan over high heat. Sear the tuna for 1–2 minutes on each side (depending on thickness) for rare, or a little longer if preferred. Rest for 1–2 minutes.
- Slice the tuna and serve on top of the coriander noodles. Garnish with spring onion and an extra squeeze of lime.
Serving Suggestion
