
Baja-Style Cod Tacos
These crisp, flavour-packed tacos are inspired by the street food of Baja California. Featuring golden battered cod, tangy slaw and a zingy lime crema, they’re perfect for a casual dinner or fun weekend feast. Best served with ice-cold beers and plenty of napkins!

Ingredients
- 2 cod fillets (around 150g each), cut into chunks
- 100g plain flour
- 1 tsp smoked paprika
- ½ tsp baking powder
- 120ml cold sparkling water or beer
- Vegetable oil (for frying)
- 8 small soft corn or flour tortillas
- Shredded red cabbage or slaw mix
- 1 tbsp mayonnaise
- 2 tbsp creme fraiche or yoghurt
- Juice and zest of 1 lime
- Fresh coriander, chopped (optional)
- Salt and pepper
Method
- In a bowl, whisk the flour, paprika, baking powder, a pinch of salt and cold sparkling water or beer into a batter. Let rest while you prep the slaw.
- Mix the mayo, creme fraiche, lime juice and zest in a small bowl. Toss a spoonful through the cabbage or slaw and season with salt and pepper.
- Heat oil in a pan to 180°C. Dip cod pieces in the batter, then fry until golden and crisp (about 3–4 minutes). Drain on kitchen paper.
- Warm the tortillas in a dry pan or oven. Fill with a little slaw, crispy cod, a drizzle of lime crema, and top with coriander if using.
Serving Suggestion
Serve with hot sauce, lime wedges and tortilla chips. Great for casual dinners, summer gatherings or seafood taco nights at home.
