Ingredients

  • 2 Hamiltons Fish sea bass fillets
  • 1 courgette, sliced
  • 1 red onion, cut into wedges
  • 1 red pepper, sliced
  • A handful of cherry tomatoes
  • 1 lemon, sliced
  • Olive oil
  • Salt and pepper
  • Optional: fresh thyme or parsley

Method

  1. Preheat your oven to 200°C (fan 180°C).
  2. Arrange the courgette, red onion, pepper, and cherry tomatoes on a large baking tray. Drizzle with olive oil and season with salt and pepper.
  3. Roast the vegetables for 10 minutes.
  4. Remove the tray from the oven, add the sea bass fillets skin-side up, and top with lemon slices and herbs if using.
  5. Return to the oven for another 10 minutes or until the sea bass is just cooked and the skin is crisp.
