Moules Frites (Mussels with Chips)
This French bistro favourite is much easier to make than you might think. Fresh mussels are quickly steamed in a garlicky white wine and cream sauce, then served with golden fries for dipping. A proper treat for seafood lovers.

Ingredients
- 1kg fresh mussels (cleaned and debearded)
- 1 shallot or small onion, finely chopped
- 2 garlic cloves, finely sliced
- 250ml dry white wine
- 100ml double cream
- Fresh parsley, chopped
- Butter or olive oil for frying
- Salt and pepper to taste
- Frozen fries or homemade chips, to serve
Method
- Heat a large lidded saucepan over medium heat and add a little butter or oil.
- Gently fry the chopped shallot and garlic for 2–3 minutes until soft but not coloured.
- Pour in the white wine and bring to a simmer.
- Add the mussels, cover with the lid, and cook for 3–4 minutes, shaking the pan occasionally until the mussels have opened. Discard any that stay closed.
- Reduce the heat and stir in the cream. Season to taste and sprinkle with chopped parsley.
- Meanwhile, cook the fries according to pack instructions or your favourite homemade method.
Serving Suggestion
Serve the mussels in large bowls with plenty of broth and a generous helping of fries on the side. Don’t forget crusty bread for mopping up the sauce!
