Moules Frites (Mussels with Chips)

This French bistro favourite is much easier to make than you might think. Fresh mussels are quickly steamed in a garlicky white wine and cream sauce, then served with golden fries for dipping. A proper treat for seafood lovers.

Ingredients

  • 1kg fresh mussels (cleaned and debearded)
  • 1 shallot or small onion, finely chopped
  • 2 garlic cloves, finely sliced
  • 250ml dry white wine
  • 100ml double cream
  • Fresh parsley, chopped
  • Butter or olive oil for frying
  • Salt and pepper to taste
  • Frozen fries or homemade chips, to serve

Method

  1. Heat a large lidded saucepan over medium heat and add a little butter or oil.
  2. Gently fry the chopped shallot and garlic for 2–3 minutes until soft but not coloured.
  3. Pour in the white wine and bring to a simmer.
  4. Add the mussels, cover with the lid, and cook for 3–4 minutes, shaking the pan occasionally until the mussels have opened. Discard any that stay closed.
  5. Reduce the heat and stir in the cream. Season to taste and sprinkle with chopped parsley.
  6. Meanwhile, cook the fries according to pack instructions or your favourite homemade method.

Serving Suggestion

Serve the mussels in large bowls with plenty of broth and a generous helping of fries on the side. Don’t forget crusty bread for mopping up the sauce!
