Product Description
Cut from the thickest part of the fillet, a cod loin is the best of the fish. Firm, chunky and with a clean, mild flavour, it holds its shape beautifully under heat and delivers a more substantial result than a standard fillet.
Roast in the oven for a golden, flaking finish, pan-fry for a crisp crust on each side, or bake gently with butter and herbs for something more restrained. The thickness of the loin means it stays moist in the middle and cooks evenly throughout. A 300g loin serves two and makes a simple supper feel a little more considered.
