Citrus Lemon Sole Skewers
These lemon sole skewers are a brilliant way to enjoy fish on the barbecue. Marinated in citrus and threaded onto skewers for quick cooking, they offer a fresh, light alternative to heavier BBQ fare - and they’re always a hit with guests.

Ingredients
- 2 x 230g Wild Lemon Sole filleted (skin on – remove if preferred)
- Juice and zest of 1 lemon
- Juice of 1 orange
- 1 tbsp olive oil
- 1 garlic clove, finely grated or crushed
- Fresh herbs (e.g. parsley, thyme or coriander), chopped
- Salt and black pepper
- Skewers (wooden or metal)
Method
- If preferred, remove the skin from the lemon sole fillets before cutting into chunks. Otherwise leave the skin on - it will cook perfectly well on the skewers.
- Cut the lemon sole fillets into large bite-sized chunks.
- In a bowl, mix the lemon juice and zest, orange juice, olive oil, garlic, herbs, salt and pepper. Add the fish and gently toss to coat. Cover and refrigerate for 30 minutes (or up to 2 hours).
- If using wooden skewers, soak them in water for 20 minutes to prevent burning.
- Thread the marinated fish pieces onto skewers, being careful not to pack them too tightly.
- Grill over a hot barbecue or under a hot grill for 3–4 minutes per side, or until just cooked through and lightly charred.
Serving Suggestion
Serve with a summer salad, flatbreads, or rice, and drizzle with any leftover marinade or a spoonful of yoghurt mixed with lemon and herbs.
