
Oven-Baked Crispy Panko-Crusted Haddock
This simple baked haddock recipe gives you the satisfying crunch of fried fish with none of the mess. Coated in golden panko breadcrumbs and baked until crispy, it’s a lighter, high-protein meal that's great for weeknights or family dinners.

Ingredients
- 2 haddock fillets (around 150–180g each)
- 1 egg, beaten
- 2 tbsp plain flour
- 50g panko breadcrumbs
- 1 tsp paprika or lemon pepper
- Salt and black pepper
- Olive oil spray or a drizzle of oil
- Lemon wedges (to serve)
Method
- Preheat the oven to 200°C (fan 180°C) and line a baking tray with parchment paper.
- Set up three bowls: one with flour, one with the beaten egg, and one with panko breadcrumbs mixed with paprika, salt and pepper.
- Coat each haddock fillet in flour, dip in egg, then press into the panko mix until fully coated.
- Place the fillets on the tray and spray or drizzle with a little olive oil.
- Bake for 12–15 minutes until golden and crisp, and the fish flakes easily.
Serving Suggestion
Serve with homemade chips, tartare sauce and peas for a lighter take on a classic fish supper. Also delicious with salad or in a sandwich wrap.
