Is Fresh Fish Ever Frozen? Understanding Seafood Labels

When you shop for seafood, online or in store, you have probably seen labels such as "fresh", "frozen", "previously frozen" and even "freshly frozen". It is not always clear what they mean, or whether the difference is one you can taste.
There is a real debate about whether frozen fish, particularly fish frozen at sea soon after the catch, can match fresh. Freezing has its place, especially for seafood that travels long distances. Even so, it is worth understanding what each label means and how it affects what ends up on your plate.
What "previously frozen" really means
Previously frozen fish has been frozen at some point after the catch and then defrosted before it reaches you. It is sometimes sold as fresh, but it is not. The texture is often softer and wetter, and a little of the quality can be lost through the freeze and thaw.
Some online sellers quietly send defrosted fish when fresh is not available, without making it clear. We do not think that is good enough.
Our promise: never previously frozen
Every piece of fish we buy at Brixham Fish Market is fresh. It is bought to order, filleted, packed and delivered in good condition. If it is not fresh, it does not go in our boxes.
We never sell previously frozen fish as fresh, and we never swap in a frozen product when something runs out. If a fish is unavailable, we tell you, and either suggest a fresh alternative or move your delivery to another day.
Can frozen fish ever be fresher?
You may have read that frozen fish is sometimes "fresher than fresh". That claim usually rests on fish frozen within hours of the catch, which is common for seafood shipped over long distances. It is a fair point for those supply chains.
It does not hold when the fish comes from the Brixham day boats. We collect from the market each morning and prepare every order by hand the same day. There is no long journey, and no freezing in between.
Fresh, and easy to freeze at home
Our fish arrives fresh, never previously frozen, and it freezes well at home if you want it to. That gives you the flexibility to buy a little more and keep some back, with the freezing done on your own terms.
Plenty of customers freeze a portion or two on the day it arrives and still eat well from it weeks later. The key is to freeze it on the day of delivery and to follow the guidance on the label.
Why it matters
With seafood, quality comes down to freshness. That is why we do a few things differently:
- No frozen substitutes. If we cannot supply it fresh, we will not send it.
- No hidden freezing. What you order is what arrives.
- Full transparency. Our labels and product descriptions spell out exactly what you are getting.
If you have ever been let down by "fresh" fish that turned out watery or rubbery, there is a good chance it had been defrosted. The difference shows most with delicate flat fish, where texture is everything: a fresh plaice, lemon sole or Dover sole has a clean, silky flake that the freeze and thaw tends to dull.
